Rainier cherries preserved in rosé wine

The mild sweetness of this white cherry marries with the light fruitiness of reduced rosé wine. Choose any dry rosé, such as one produced locally from pinot noir grapes. For an unexpected dessert, spoon the wine-steeped, room-temperature cherries over panna cotta or ricotta cheese. Or, serve them chilled in bowls floating in their sangria-like liquid and offer almond biscotti on the side.
